"Hitakami Cho-Karakuchi Junmai" is a +11 nihonshu sake by Hirakou Brewery in the Miyagi Prefecture. This brewery is located in Ishinomaki, a fisherman's town listed as one of the world's three biggest fishing ports. As the brewery is built in a fisherman's town, the sake has outstanding compatibility with fish dishes. Although it is cho-karakuchi (ultra-dry), it has a firm taste and a full flavor of rice. It is delicious when cold and is great to have with sushi.
