The oyama nishiki is characterized by its easy taste and has a large grain and white core, and is a rice characterized by its cotyledon germination rate of almost 100%. However, it makes a light taste by making a lot of lees, and it also prone to cracking and melting in processing the raw ingredients. It has an elegant aroma and a soft taste that is compatible with chicken and vegetable dishes. During the Nara period, the emperor of the time visited the Yoro Falls and admired the clean water and changed the town's name to "Yoro".
