Manager Shinjiro Inoue (Inoue Brewery), a brewer at Kobe Nada-Gogo (Uozaki Township), brought up "Shochikubai" in 1924. And in 1958, when it faced difficulties in management, backed by Takara Brewery, it shifted to independent management, but the brand of "Shochikubai" remains to the present. Brewery: Takara Brewery (Shirakabe Warehouse) Features: Sake is brewed in a new facility while using traditional handmade principles. We mainly manufacture junmai sake and ginjo sake made by delicate processes. Alcohol is made in the Shirakabe plant using miyamizu hard water that contains minerals and low iron content which causes deterioration of taste and aroma. Suitable food: Sashimi, New Year dishes
