This can produce a sake with no spicy taste and it remains beautiful even if the rice polishing ratio increases. It is a valuable rice which is difficult to mow because it is easy to lodge when the stem is long and it can easily be affected by typhoons and even vulnerable to pest damage, the reason why farmers raised it carefully. A mix of water from different sources specifically in the area in Nishinomiya City and the "Ryuanji underground water", "Wadashi underwater ", "Ebiryu flow water" and the rain falling in the Rokko volcano is said to be the secret of this delicious sake. All white liquor is brewed with Miya water. Miya water is known to have hard water containing moderate minerals.
