Product name: Kumamoto Shinriki Origin: Yamaga city, Kumamoto Prefecture Characteristics of production area: Honda family who is a wholesaler began sake brewing in 1896 (Meiji 29) and after establishing Honda Brewery, they established "Chiyono Garden brewery". The tower chimney is also a symbol of the history of this warehouse. Since its establishment and as a result of the fact that it began as a wholesale rice store, we have kept an extraordinary commitment to raw rice. It evolved the sake-making rice "Shinriki" which was grown from Taisho to Showa, and created a new breed called "Kyushu Shinriki". Also, after the war, in the days when ordinary sake was still in full bloom in Japan, we started pure rice (Junmai) wine making and introduced the idea before any other sake brewery across the country. Even now we continue to challenge the era, including commercialization of Daiginjo wine using cork stopper, there still existed such a history of warehousing to continue 100% self-polished rice without changing. The pure underground water that springs off from the foot of Aso and the taste of the good quality cultivated rice is exceptional.
