Origin: Iwakuni City, Yamaguchi Prefecture Characteristics of production area: Hiroshi Sakurai of the third generation succeeded the 34-year-old family business which was then a small sake brewery in Yamaguchi prefecture and stopped the brewing of ordinary "Asahi Fuji" sake which the company had been brewing until then in search of a sake that people drink for the flavor and not just for getting drunk. Junmai Daiginjo was brewed under this policy, whose popularity has spread from Yamaguchi prefecture to Tokyo over the years through word of mouth and enjoys over 10 billion yen in annual sales. Taste: You can enjoy a refined aroma with an elegant mouthfeel. History: Established on the 23rd year of the Showa era (1948) Brewery name: Asahi Shuzo Co., Ltd. Features: We use 39% polished Yamada Nishiki. The characteristic of the manufacturing method is that there is no head sake brewer. It separates the alcohol from the lees in a non-pressurized state to preserve the original aroma and full flavor of rice. Suitable foods: Spanish mackerel sashimi, grilled sashimi, red seabream in ponzu, amberjack shabu-shabu, etc.
